There’s just something about a jacket potato (especially a doubled stuffed bacon jacket) that screams comfort. Fluffy on the inside, crispy on the outside – they’re a British classic for good reason. But when you double stuff that potato with smoky bacon, gooey melted cheese, spring onions and creamy sour cream? Now we’re talking next-level comfort food. This bacon-stuffed jacket potato recipe is hearty, satisfying, and guaranteed to win over whoever you’re cooking for.

I first made this recipe during my Jacket Potato Week series back in 2021, and it instantly became a fan favourite. The combination of crispy potato skins, smoky bacon, and a creamy, cheesy filling ticks all the boxes – and the best bit? You can adapt it with whatever you’ve got lurking in the fridge. Got leftover roast chicken? Toss it in. A handful of spinach that’s on its last legs? Wilt it into the mix. Want it fiery? Add a pinch of chilli flakes or a dash of hot sauce. It’s a truly versatile dish, so don’t let food go to waste, whack it on this bad boy!

The pub classic is making a comeback

Bacon stuffed jackets are what you wanna find in a pub, so if you want to go all-in on that vibe, serve them with buffalo chicken wings, coleslaw, and a crisp mixed salad. They also make a brilliant way to use up leftover cheese from a cheeseboard – cheddar, Red Leicester, even blue cheese can work if you’re feeling bold. The hot, bubbling cheese topping is the true show-stopper here, so don’t skimp – pile it high and let it melt into the filling. No point holding back if you’ve got cheese to spare.

If you’re planning ahead, you can bake the potatoes in advance and stuff them later, making this a perfect prep-ahead recipe for parties, casual gatherings, or cosy nights in. They reheat beautifully in the oven, so you can even make a double batch and have them ready for a quick lunch the next day.

  • 2 baking potatoes
  • 100g smoked bacon lardons
  • 2 tbsp sour cream
  • 1 tbsp butter
  • 3 spring onions, sliced
  • Couple handfuls of grated cheddar and grater double Gloucester
  • Salt and pepper to season
  • Sprinkle of chopped chives
  • Extra sour cream for blobbing

  • 2 baking potatoes
  • 3.5oz smoked bacon lardons
  • 2 tbsp sour cream
  • 1 tbsp butter
  • 3 spring onions, sliced
  • Couple handfuls of grated cheddar and grater double Gloucester
  • Salt and pepper to season
  • Sprinkle of chopped chives
  • Extra sour cream for blobbing

Instructions

  1. Preheat the oven to 180°C Fan/400°F/Gas Mark 6. Then oil up your potatoes and place them onto the middle rack in the oven. Bake for around 40-60 minutes.
  2. In a medium sized frying pan on a medium heat, cook the lardons until golden and crispy.
  3. Once the potatoes are baked, scoop out the middle into a bowl and mix in the bacon, sour cream, salt, pepper, most of the spring onions, 3/4 of the cheese and the butter.
  4. Mix well until fluffy and refill the potato skins.
  5. Cover in the remaining cheese and place on a baking tray, then get them back into the oven for 10-15 minutes.
  6. Once baked and the cheese is melted, remove from the oven and sprinkle over chives, another dollop of sour cream and whatever else you fancy.
