The power of a good lunch
Let’s be real, I’ll take any excuse to whack a bit of halloumi into a meal, and hot honey halloumi flatbreads are no exception. I’m not saying it’s life-changing… but I’m also not not saying that. This is the kind of lunch that genuinely transforms your day. You know that work task you’ve been avoiding for literally months? Finally done it. That meeting that should’ve been an email? You’re suddenly contributing like you own the company. Rush-hour commute from hell? Shania Twain on blast and loving life. This flatbread has that effect. Pure contentment. Productivity. Inner peace. Cheese-based euphoria.
Also, I keep seeing how everyone is talking about how Summer is over, I mean it’s still August and I’m just not having it. So before you roll out the slow cooker soups, pumpkin lattes and chunky knit scarves, hold onto summer that little bit longer with this vibrant, salad-y flatbread lunch and bring the suncream…just in case.
It’s giving… lunchtime luxe
Now yes, I’ve banged on about the cheese (and rightly so, it’s golden, squeaky, spicy, and drenched in spicy honey), but let’s not skip over the real unsung hero of this dish — the salad. It’s fresh, zesty, and absolutely packed with flavour. Think peppery rocket, cool cucumber, crisp radish, pomegranate jewels, herby mint and coriander, and of course, a hefty dollop of Greek yoghurt spiked with garlic. Basically, it’s giving freshness, it’s giving crunch, it’s giving “I actually enjoyed a salad.”
The contrast of hot, sticky, golden halloumi with cool, tangy, vibrant salad on a pillowy flatbread? Chef’s kiss. This is the kinda lunch that has you feeling like you’ve got your life together, even if your inbox says otherwise.
Midweek meal magic
My hot honey halloumi flatbreads are the perfect dish to whip up for a WFH lunch, a busy office day, a weekend treat, or a dinner that doesn’t leave you in a washing-up spiral. It’s quick, easy, and ridiculously satisfying. Plus, you can totally batch the salad for the week and just griddle the halloumi fresh. Time-saving queen behaviour. We love it.
Can I add some more protein?
If you want to add some extra protein, marinate some chicken in lemon juice, garlic, yoghurt and spices before grilling in the same way as the halloumi. You can also throw in a few hard boiled eggs if you fancy.

Hot honey halloumi flatbreads

Ingredients
For the halloumi flatbreads
- 1 x 225g block halloumi, sliced into 8 pieces
- Squeeze of hot honey (add chilli flakes or hot sauce to regular honey if you don't have any)
- 2 flatbreads

For the rocket salad
- Large handful rocket, washed
- Small bunch fresh mint
- Small bunch fresh coriander
- 100g pomegranate seeds
- 2 baby cucumbers (or 1/2 large), sliced into rounds
- 4 radishes, thinly sliced
- 100g thick Greek yoghurt
- 1 clove garlic, finely minced or grated

Instructions
- Preheat the oven to 200ºc fan/220ºc/400ºf. Preheat a griddle pan (or a frying pan is fine too) until smoking hot. Dry the slices of halloumi with a kitchen towel and drizzle lightly with olive oil. Griddle the halloumi until golden brown, then flip and drizzle in hot honey. Drizzle honey on the other side too, then remove from the pan and set aside on a plate covered with foil to keep warm.
- While the halloumi is finishing grilling, pop the flatbreads in the oven for a few minutes to warm through. In a bowl, mix together the grated garlic and Greek yoghurt with a big pinch of salt and pepper.
- In another bowl (sorry for the washing up!) mix together the pomegranate seeds, rocket, cucumber, sliced radishes, mint and coriander. Dress the salad with a little olive oil and a pinch of salt and pepper.
- Load up the flatbreads with the garlicky yoghurt, glazed halloumi and a big handful of the salad. Add a final drizzle of good quality extra virgin olive oil and some more hot honey and get stuck in there.
