One pot continued…with my perfect fluffy breakfast staple.
And no, this isn’t your delicate little crepes, oh no. This is a monster of a pancake, a proper sharer.
I couldn’t contain my delight when I could test this recipe again and again…and again for my latest cookbook, Poppy Cooks: The Actually Delicious One Pot Cookbook.
Thick, fluffy pancakes packed with melted chocolate, pistachios and a drizzle of classic maple syrup. It’s an absolute family fave.
Breakfast, brunch and dessert vibes
This is truly a versatile dish that is ideal for every time of day. Serve it up with your coffee and orange juice for brekky, bang on the table for a boujee brunch or tuck into it during movie night. It is the perfect sleepover food in my opinion.
Why a traybake/one pot situation?
I LOVE a traybake and let me explain why…you throw everything onto one tray, bang it in the oven/hob, and you’ve got a beautiful meal with minimal effort but a whole load of flavour. Less pans, less washing up and less hands on cooking. Mix a few things, watch it cook and you’re done.
But just because it’s easy doesn’t mean it’s boring. In fact, I’d argue a good traybake is one of the best ways to pack in flavour, because all those ingredients cook and fuse together.

What are the ingredients?
- 270g plain flour
- 6 tablespoons caster sugar
- 2 tablespoons baking powder
- 2 large eggs
- 260ml whole milk
- 60g butter, melted
- maple syrup for drizzling

- banana slices
- chopped crispy bacon
- dried cherries

This dish is incredible on its own, straight from the pan (because let’s be real, who can resist a few nibbles?). But if you want to try out a few more flavour combos, why not try:
