3-Ingredient Lemon Posset

Introducing the lemon posset. The recipe they love to make on every other episode of Come Dine With Me, however there’s good reason for that as it’s so ridiculously easy to make. Peter and Jane may not have come to blows if he’d served this tangy number on the night. So if you have more grace and decorum than a reversing dump truck with no tyres, this is the dessert you need to try. So what makes this dessert so popular?

Like I mentioned earlier, this dessert is super simple to make, you can prepare it the night before and you only need a total of 3 ingredients. I repeat. ONLY. THREE. INGREDIENTS. If ya wanna jazz it up with some berries, that’s technically 4 ingredients but that’s the optional fancy version if Channel 4 are popping in. And like the rest of the world, I’m slightly obsessed with #LemonTok so this now dominates my feed. 

The ingredients you need for this recipe are lemons, double cream and sugar. The lemon brings the refreshing tartness (I always throw in a lil extra lemon as I like mine more on the tangy side), the sugar brings the sweetness to balance out the tartness and the double cream gives you that velvety smooth texture that helps it set beautifully after an overnight stay in the fridge. It’s a testament to the notion that sometimes extraordinary desserts come from the simplest ingredients. 

I love serving these up in pretty teacups or ramekins with a homemade shortbread biscuit because the professional chef in me can’t help plating every dessert to perfection and in something delicate and breakable.

Ingredients

  • Juice of 1-2 lemons (I used two as I like it tart)

  • 10fl oz double cream
  • 300ml double cream
  • 3oz caster sugar
  • 75g caster sugar
  • Optional berries to garnish

Method

  1. Weigh out your sugar and cream, then mix together in a saucepan. Bring to the boil, then reduce and simmer for around 5 mins. Be careful not to let it burn.
  2. Take off the heat and stir in the lemon juice, taste and adjust flavour as you see fit. I personally like quite a tart dessert so reduce quantities if needed.
  3. Sieve and pour your combined mixture into tea cups or ramekins or anything else you can find that looks cute! This recipe makes around 3 tea cups or two bigger portions.
  4. Set in the fridge overnight.
  5. Remove from the fridge, serve with berries, homemade shortbread biscuits or enjoy on its own!
