The perfect roast chicken every time
Are you tired of eating dry chicken? Are you looking for a delicious, moist, herby chicken? Well, my friend, the answer to all of your problems is here. The air fryer. And lots of butter…
The secret to moist meat is making sure you’re rubbing butter right in between the skin and letting that cook through as your chicken roasts in the oven. By making a compound butter before (a fancy word for mixing herbs in your butter) you can also get a heap of beautiful flavours into your bird.
This is a delicious roast for Sunday or any day of the week. Get it on your plate with your roasties, carrots and veggies, pour over your gravy and have the best day ever. Or if you’re anything like me, dip your bread into the chicken fat and make yourself a delicious roast chicken sandwich.
But why the air fryer instead of the oven?
Ideal if you want to cook all your veg in the oven and need that extra space. The air circulation of an air fryer also helps keep the bird moist and cook evenly. Plus, the skin crisps beautifully!
Plus, I will forever be in awe when it comes to an air-fried roast chicken because it’s truly that good. Obviously, make sure you get one that properly fits in your basket/drawer. Don’t forget to save those meat juices for the gravy (which naturally I have also made in the air fryer…more on this later).

Faster roasting than an oven
Crispy skin without drying the meat
Less splatter and mess
Potential con:
Large chickens may need flipping or careful positioning, depending on basket size
What to do with leftovers?
If you have any leftover chicken, keep it for pastas, salads, sandwiches or a classic Caesar salad.
I also like to use the carcass for chicken stock or chicken soups, especially during flu season, which seems to get longer each year. Or maybe that’s because I’m in the my 30s now…

Air fryer roast chicken

Ingredients
- 1.2kg chicken
- 50g salted butter, softened
- 2 cloves garlic, peeled and minced
- 2 sprigs of rosemary, leaves picked and chopped
- 1 lemon, zested and juiced
- 100g sausage meat (optional)
- Salt

Instructions
- In a bowl, mix together the butter, garlic, rosemary, lemon zest and juice and a big pinch of salt and pepper. Use your fingers to carefully separate the skin from the flesh, being careful not to poke any holes in the skin.
- Smush the butter under the skin of the chicken and spread it out to a thin layer. Remove the wishbone from the chicken and force the stuffing into the cavity of the bird. Season the skin generously with salt.
- Place the chicken into the air fryer basket. Roast at 190ºc/375ºf for 35 minutes or so, until it's cooked through and golden brown. Leave to rest for atleast 10 minutes before carving into the juicy bird.
