Hot honey is back and this time…on a roast dinner

I realise we’re bringing out the hot honey again (you may have seen it appear in a few of my other recipes recently), but why complicate things when something works this well? This time we’re adding that wonderful sweet and spicy kick to a batch of air fryer parsnips to give them a bit of extra oomph. Sweet, earthy parsnips and hot honey are an absolute dream combo. The natural sweetness of the parsnips pairs beautifully with the sticky honey and gentle chilli heat, creating something that feels a little bit fancy but is incredibly easy to make.


LETS EAT MORE PARSNIPS

Plus, we don’t eat enough parsnips in my opinion. Why do they always feel like the forgotten roast dinner veg? Everyone gets excited about the roast potatoes (fair), but parsnips deserve their moment too. When roasted properly they become  soft on the inside with those caramelised edges on the outside and once you add hot honey into the mix, they become borderline addictive.

These are brilliant served alongside a classic Sunday roast, but they also work really well as part of a midweek traybake or even as a little veggie side for chicken, pork or sausages. Basically, if you’re already using the air fryer, you might as well throw these in too.


Why use an air fryer?

The bonus of using the air fryer here is that no parboiling is required, which saves both time and washing up. I like to halve the parsnips lengthways so they cook quickly and get those lovely caramelised edges. If your air fryer basket is on the smaller side, you can trim them shorter but just try to keep the sizes fairly consistent so everything cooks evenly.

As great as air fryers are, the air circulation can sometimes be a little bit janky, so make sure you give the parsnips a turn halfway through cooking. This helps them colour evenly and prevents any pale or soggy sides. Once they’re nearly done, that’s when the hot honey goes in, coating everything in a glossy, sticky glaze that finishes caramelising during the final few minutes of cooking. The result is sweet, spicy, golden parsnips that might just steal the spotlight from your roast potatoes.

Air fryer hot honey parsnips

  • 4 large parsnips, peeled and quartered
  • 2 tbsp runny honey
  • 1 tbsp chilli flakes
  • 1 clove garlic, peeled and finely grated or minced
  • 25g butter
  • Salt and black pepper

Instructions

  1. Tip the honey and chilli flakes into a small saucepan and place over a medium low heat. Bring to a bubble, stirring occasionally, until the honey has turned a pale red and infused.
  2. Add the garlic to the pan and swirl in the butter. Pour the honey mixture over the parsnips in a bowl and toss to coat. Tip all of the parsnips into the basket of your air fryer, then cook for 8 minutes at 180ºc/350ºf.
  3. After 8 minutes, pour over any remaining honey and give them another toss in the basket. Return to the airfryer for another 8 minutes, until cooked through, sticky and golden.
  4. Serve your parsnips with a big pinch of salt and pepper, and pour any honey from the bottom of the air fryer on top.
