All day breakfast baked potato

THIS is the baked potato of your dreams. The ALL DAY BREAKFAST BAKED POTATO 🥓🍳🍅

The single biggest issue with this dish is, do you have it for breakfast or do you have it for lunch?! There is no right or wrong answer in my eyes but you absolutely have to try it immediately. It’s got bacon, it’s got cheese, it’s got egg and omg I’m obsessed. The next debate we’ll be tackling is tomato sauce or brown sauce.

If you wanna be extra, throw on some crispy black pudding, baked beans, fried mushrooms and hash browns for that carb on carb deliciousness. Does anyone else put vinegar on their beans? I recommend.

  • 1.5oz salted butter
  • 50g salted butter
  • 3.5oz button mushrooms, sliced
  • 100g button mushrooms, sliced
  • 1 clove garlic, finely chopped

Method

  1. Prick the potatoes all over with a fork and pop in the microwave for 7-10 minutes. While the potatoes cook, preheat the oven to 200ºc/400ºf, and also preheat a frying pan over a medium high heat.
  2. Drizzle the potatoes with olive oil, season well with salt and pepper and throw in the oven for 30-40 minutes to crisp up. Add a glug of olive oil into the pan, then crumble the sausage meat into the pan and break up with a spatula, cooking until golden brown.
  3. When the potatoes are cooked, use a sharp knife to slice off the top of the potatoes and spoon out the cooked fluffy middles into the cooked sausage meat. Season well and mix it all together then remove from the pan.
  4. Pop the pan back on the heat with a bit more olive oil and throw in the sliced mushrooms to fry off. Add in the garlic, season well with salt and pepper and cook until the mushrooms are golden brown, then stir through the chopped parsley.
  5. In the hollowed out jacket potato, spoon in a layer of the sausage and potato mix and pack it down, then a spoonful of beans and top that with the mushrooms. Crack the eggs into a small bowl and scoop out the yolk, popping it in the centre of the top of the potato. Pour in some of the egg white around the sides of the yolk, then carefully wrap bacon around the top of the potato.
  6. Increase the heat in the oven to 220ºf/430ºf. Place the potatoes on a lined baking tray and roast until the bacon is cooked and the middle is steaming. Serve up with ketchup or brown sauce and get stuck in bab.
