Baked Feta Smashed Spuds

Remember the baked feta pasta trend that absolutely took over TikTok and the world? Well, potatoes just entered the chat and I’m not sorry about it. Bye pasta. I’m yet to find a food trend that hasn’t been improved by a spud.

The beauty of this dish is how quick and simple it is, but so full of flavour. You’ve got delicately spiced roasted spuds absolutely smothered in a hot and creamy feta cheese sauce with the sweet, tanginess coming from the roasted cherry tomatoes and garlic. This is a winning meal and can be enjoyed alone or throw on some chicken skewers and simple green salad if you wanna make a full on meal out of it.

For the Smashed Spuds

  • 1.1lb baby potatoes
  • 500g baby potatoes
  • 1 tbsp smoked paprika
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp garlic powder
  • 1 tsp flakey salt
  • 1 tsp flakey salt
  • 1/2 tsp oregano
  • 1/2 tsp oregano
  • Pinch of cayenne pepper
  • Pinch of cayenne pepper
  • 2 tbsp olive oil
  • 2 tbsp olive oil

For the Baked Feta

  • 1 block DOP feta
  • 1 block DOP feta
  • 1.1lb cherry tomatoes
  • 500g cherry tomatoes
  • 1 bulb of garlic
  • 1 bulb of garlic
  • 2 sprigs of rosemary
  • 2 sprigs of rosemary
  • 1 1/2 tsp oregano
  • 1 1/2 tsp oregano
  • 1 tsp smoked paprika
  • 1 tsp smoked paprika
  • 1/2 zest of a lemon
  • 1/2 zest of a lemon
  • 1 tbsp olive oil
  • 1 tbsp olive oil
  • Sprinkle of flakey salt & crack of black pepper

Method

  1. Preheat the oven to 180°C Fan/400°F/Gas Mark 6.
  2. Boil the spuds in cold salted water until fork tender. You don't want super mushy potatoes as you want them to hold their shape.
  3. Once cooked, drain the potatoes off and squash them down using the bottom of a mug or jar or pan or just your hands if your feeling adventurous (although please don't burn yourself).
  4. Place the newly squashed potatoes on a baking tray and add the rest of the herbs and spices, give them a toss and place in the oven for around 20 mins.
  5. Whilst these bad boys cook, in a separate tray add your tomatoes, feta and other ingredients, a glug of oil over it all and then place in the oven with the spuds and continue cooking everything for a further 30 mins. Just keep an eye on them.
  6. Once everything is cooked, the spuds are crispy and the feta is soppy, squish all the feta mixture together and add in the spuds and enjoy!!
