Brunch just got a whole lot more indulgent

We recently celebrated Pancake Day here and it left me feeling inspired by something else entirely…the fillings. More specifically banana and Biscoff. Now this is already an elite ingredient combo, plus a little bit healthy right?! But I thought that instead of piling this onto pancakes, it would be incredible smoothered inside a warm and crisp croissant. 

This is genuinely a top-tier breakfast and brunch recipe. I am actually obsessed. And to make this even better, I whipped it up in the air fryer.


Tell me more about this filling…

To make the croissant stuffing I simply whisked up some double cream, Biscoff spread and a small pinch of salt together to form stiff peaks. The salt is important because it balances the sweetness and stops everything from becoming overly sugary. 

The key thing here is texture. If the mixture is too runny it won’t stay inside the croissant and you’ll end up with more filling on your plate than in your pastry, which would of course be an absolute travesty. 

Then comes the banana. Fresh slices tucked into the filling add a bit of fruity goodness and an extra bit of texture. We love some added nutrition. 

Once everything is stuffed and ready, I microwave a little extra Biscoff spread until it’s runny and drizzle it over the top. Because why not! 


Why using an air fryer just makes sense

The air fryer is so perfect for recipes like this. Instead of heating up a whole oven for a couple of croissants, the air fryer warms them quickly while giving the outside that perfect flaky crispness. There’s no need to pre-heat, it uses less energy, ideal for smaller portions and so much quicker overall.

FAQ

Can I cook this in the oven instead?

Yep! Preheat your oven to 180°C/350°F, place the croissants on a baking tray and bake for 5–6 minutes until warmed through and lightly crisped.nThey won’t be quite as quick as the air fryer as you’ll need to preheat, but they’ll still be delicious.


Can I use a different spread like Nutella?

Of course. Nutella or other chocolate spreads work great. You could also try peanut butter, almond butter or even pistachio cream. 


Can I make the filling ahead of time?

Yes. The whipped Biscoff cream can be made a few hours ahead and kept in the fridge until you’re ready to assemble the croissants. Just give it a quick whisk if it firms up too much.


Can I use shop-bought croissants?

Yep and I actually recommend it. Life is far too short to be laminating pastry for a quick brunch recipe. But if you’re into that, go for it bab! Good quality bakery or supermarket croissants work perfectly.


Can I add other toppings?

I again encourage this. If you want to go full brunch extravaganza you could add:

  • Chopped hazelnuts/peanuts etc

  • Crushed Biscoff biscuits

  • Chocolate chips/pieces

  • Strawberries and raspberries

  • Icing sugar

  • 2 croissants
  • 2 tbsp Biscoff spread
  • 150ml double cream
  • 1 banana, sliced
  • Pinch of salt
  • A few Biscoff biscuits, crumbled

Instructions

  1. Preheat the oven or airfryer to 180ºc/350ºf. Place the croissants on a baking tray and pop into the oven or air fryer for 5-6 minutes, until crisped up and golden.
  2. While the croissants bake, whisk together half of the Biscoff spread and all of the double cream with a pinch of salt until it reaches stiff peaks. Melt the remaining spread in the microwave until runny.
  3. Pipe or spread the cream mixture into the centre of the croissants and top with slices of banana. Drizzle the liquid spread over the cream and bananas, then place the lid on top.
