These chocolate chip cookie ice cream sandwiches are everything a summer treat should be: nostalgic, indulgent, and dangerously easy to devour in one sitting. Soft, chewy homemade chocolate chip cookies wrapped around creamy vanilla ice cream? Honestly, name a better duo—I’ll wait.
I used to think a 24-pack of budget choc-ices was the pinnacle of frozen treats growing up. But then I met these. There’s just something magical about biting into that soft cookie shell and hitting the cold, creamy centre. It’s giving dessert-of-your-dreams energy. Whether you’re hosting a BBQ, sunbathing in the garden, or just want something fun from the freezer, this is your go-to sweet snack, and if you have any young visitors, prepare to be their favourite person after serving up a batch.
Imagine this: it’s 28°C, you’re sat in the garden with your feet dipped in that tiny paddling pool you originally bought for the dog (but secretly use more than them), sunnies on, sun cream slathered, book in one hand… cookie sandwich in the other. Pure bliss.
Cookie variations and flavour ideas
These are super easy to personalise too. Add chopped hazelnuts, switch up the chocolate (dark, milk, white, or all three—no rules here), or even throw in some mini pretzels for a salty crunch. As for the ice cream filling, vanilla’s a classic, but you could go all out with salted caramel, cookie dough, mint choc chip, or even strawberry cheesecake. Don’t hold back. I personally love mint choc chip.
Freezer tips
You can freeze the cookie dough balls and bake them straight from frozen. Just add a few extra minutes to the baking time and you’re sorted. You can also make these ice cream sandwiches in bulk and keep them in the freezer for unexpected guests… or, let’s be honest, late-night snack emergencies.

Chocolate chip cookie ice cream sandwiches

Ingredients
- 250g soft unsalted butter
- 250g caster sugar
- 150g light brown sugar
- 2 tsp vanilla extract
- 2 eggs
- 425g plain flour
- 1 tsp baking powder
- 1/2 tsp sea salt
- 200g chopped dark chocolate - I used a really dark 90% for this!

Instructions
- In a mixing bowl or the bowl of a stand mixer, beat together the soft butter and both sugars until light and fluffy. Add in the eggs, one at a time, and combine between each addition.
- Pour in the vanilla extract and mix again. Tip in the baking powder, sea salt and plain flour, then mix to a dough. Roll into 50g/1.5oz balls and place on a parchment lined baking tray.
- Pop the whole tray into the fridge for atleast a few hours, but overnight is best to stop them spreading.
- When you're ready to cook, preheat the oven to 170ºc fan/190ºc/325ºf. Place the cookies evenly on a parchment lined baking sheet with plenty of space around them and bake for 15-18 minutes, until lightly golden brown around the edges.
- Remove the tray from the oven and leave to cool on the tray for a few minutes. Use a spatula to transfer the cookies to a cooling rack and allow to cool completely.
- When your cookies are cold, match them up in pairs of the most similarly sized cookies. Add a big scoop of vanilla ice cream in the middle and sandwich the cookies together, then get stuck in!
Notes & Tips
- Add in nuts or change up the chocolate in these cookies for a fun twist, along with some different ice cream flavours! You can freeze the cookie dough balls and then bake from frozen, they might just take an extra few minutes.
