I also feel like my line dancing skills have truly flourished, seriously why were we not line dancing in the cluuuub? I’d have fully got behind this and not have succumbed to twerking. Less about Beyonce now and more about this beautiful, buttery, herby, meaty baked potato that I am absolutely crazy in love for 👀 I’ve got a problem. 99 problems. STOP ME. I’m one step away from donning a metal heart bikini and straddling a glittery horse.

What is cowboy butter?

Right, cowboy butter. It’s essentially butter with a mix of herbs and spices that is typically served with steak, prawns and other BBQ goodness. I thought let’s take it to the next level and smoother it over a baked potato. The zesty conconcotion oozes into each carby crevice and it’s honestly delicious. This butter is great with chicken, prawns, or make into a buttery pasta sauce.

  • 1 Ribeye steak
  • 1 Ribeye steak
  • 2 cloves garlic, crushed but still in their skins

Cowboy butter baked potato

  • 2 Maris Pipers (or white potatoes)
  • 2 Maris Pipers
  • 3.5oz softened salted butter
  • 100g softened salted butter
  • 1/2 tsp cobanero chilli flakes
  • 1/2 tsp cobanero chilli flakes
  • 1 1/2 tsp onion granules
  • 1 1/2 tsp onion granules
  • 1 tsp garlic granules
  • 1 tsp garlic granules
  • 1 lemon, zested
  • 1 lemon, zested
  • 1 tsp smoked paprika
  • 1 tsp smoked paprika

Method

  1. Roast your spuds however you like - you can pop them in the airfryer or chuck them in the oven, just make sure they have a good coating of oil, salt and pepper all over.
  2. Mix together the spices, lemon zest and softened butter with salt and pepper.
  3. Cut a cross into the middle of the baked potato and use a fork to fluff up the middle of the potato and melt in a large spoonful of the spiced butter.
  4. Preheat a frying pan until smoking hot and season the steak well with salt and lots of pepper. Oil the steak and fry for around 3 minutes each side for a lovely medium, throwing in the garlic, thyme and rosemary with a bit spoonful of the cowboy butter when you flip. Baste the steak then leave on a tray to rest while you cook the spring onions.
  5. Slice 2 of the spring onions lengthways and throw them into the hot pan that you used to cook the steak. Allow them to char off and season with salt and pepper, then remove from the pan and serve up with your jackets. With the remaining spring onion, slice it into thin rounds on a diagonal slant and sprinkle all over the top of the potato. Slice the steak and serve up!
