Crunchy honey bacon potato cubes

Although this is part of my 24 Days of Christmas Potatoes series, this potato dish actually makes me think of Spain and hot weather and lazing about by a pool. Now I’m sad because all I can see out my window is rain and my bins that need bringing in. The glamorous world of Poppy Cooks!

Eating these sweet and cheesy babies did bring back cheer me up a lil bit though, as a potato always does tbh.

The combo of flavours and textures within this dish is what really makes it stand out. You’ve got the CROUNCHIEST little bitesize potato pieces, the saltiest bacon lardons, sweetest honey and creamiest feta all going on in there and it’s giving holiday vibes. Both summer and winter. The addition of Rosemary did make me feel kinda festive tbh.

When making my honey, bacon and feta crispy cubes, I do like to throw in some chilli flakes or the odd fresh chilli to add a lil spice, but that’s completely optional. What’s also great about this recipe is that you don’t need specific measurements, simply measure with your heart and you can’t go wrong. Enjoy as a snack or serve with your classic meat and greens.

Ingredients

  • 4 maris piper potatoes (or other white potatoes)

  • 1 pack smoked bacon lardons
  • 1 pack smoked bacon lardons
  • 3 sprigs of rosemary
  • 3 sprigs of rosemary
  • 2 tbsp honey
  • 2 tbsp honey

  • 1/2 red chilli, deseeded
  • 1/2 red chilli, deseeded
  • 2oz crumbled feta cheese
  • 50g crumbled feta cheese
  • 2 tbsp veg oil
  • 2 tbsp veg oil

Method

  1. Peel and chop your potatoes into 1cm/0.2inch cubes and bring to the boil in cold salted water until slightly softened.
  2. Preheat the oven to 180ºc/350ºf and heat the vegetable oil in a baking dish. When the potatoes are cooked, drain and leave to steam dry for 5 minutes and then roast in the hot oil for 1 hour, stirring occasionally.
  3. When the potatoes are nearly finished cooking get a frying pan over a medium high heat and fry off the bacon lardons until golden brown.
  4. Throw the potatoes in with the bacon and toss them together. After 2 minutes drizzle in some hot honey (you can make this by heating together in a pan the honey, chilli and garlic from the ingredients list, or we make our own infusion and leave it on the side).
  5. Crumble over the feta and a sprinkle of flaky salt to finish.
