And what did I do to really make this video POP, you ask? I recorded myself singing my own rendition of ‘Careless Whisper’ by George Michael. This parody was not the hit I was hoping for, instead it has remained hidden within the depths of my TikTok page, undisturbed. Until now. I’m owning it. I’m a mega George Michael and Wham! fan and I’m not ashamed. Love you George, love you Andrew. I also think I lost followers after this tbh.

I couldn’t hide this cheesecake away because it’s a thing of pure beauty. We start with a crunchy Daim and biscuit base, followed by a smooth caramel layer then it’s topped off with a creamy and sweet mascarpone layer that features even more crunched up Daim bars. There’s no baking involved so it’s a great dessert to prep in advance and ideally you want to leave this to set overnight.

If you’re looking for something a lil fruitier, give my cherry bakewell cheesecake a go. This is probs my fave ever cheesecake and is more technical and requires a bit baking, but it’s so worth the extra effort.

Ingredients

For the Base

  • 220g biscuits
  • 220g biscuits
  • 4 Daim bars
  • 4 Daim bars
  • 75g butter, melted
  • 75g butter, melted

For the Middle

  • 100g caramel
  • 100g caramel

For the Topping

  • 5 Daim bars, crushed
  • 5 Daim bars, crushed
  • 340g cream cheese
  • 340g cream cheese
  • 500g mascarpone
  • 500g mascarpone
  • 300ml double cream
  • 300ml double cream
  • 100g caster sugar
  • 100g caster sugar
  • 1 tsp vanilla extract
  • 1 tsp vanilla extract

Method

  1. We're going to start with the base. With your 4 Daim bars, with a knife carefully scrape off the chocolate. Set aside the chocolate for later on.
  2. Using the bars you've been scraping, crush these into a mixing bowl alongside the biscuits and melted butter. Crush them as much as you want!
  3. Grab a cake tin or whatever you want to use and add the biscuit base. Make sure you compact it down so it covers the bottom with no gaps.
  4. Leave this to firm up. Once set, add your caramel layer. Make sure you have an even covering.
  5. Next, you're going to make the topping. In a large mixing bowl add your mascarpone, cream cheese, sugar and vanilla, then mix until all combined and smooth.
  6. Whip in the double cream and your 5 crushed Daim bars. Again, stir til all combined.
  7. Add this creamy mixture on top of your caramel layer and then place in the fridge to set overnight.
  8. Sprinkle over the chocolate scrapings that you saved earlier on as decoration.
  9. Slice into generous portions and dig in! I like to drizzle over warm chocolate sauce if I'm feeling extra fancy.
