If you’re after a lunch that feels fancy but requires minimal faff, these fig, burrata and parma ham toasts are exactly what is required. It’s the kind of plate that looks effortlessly impressive — like something you’d order at a pricey brunch spot — but it’s actually super simple to throw together at home.
This recipe combines crispy toasted sourdough, creamy burrata, fresh figs, salty Parma ham, and a drizzle of honey and balsamic vinegar, all finished off with sprigs of thyme and dollops of pesto. It’s a sweet, savoury, herby mouthful with layers of texture and flavour. Basically: perfection.
It’s a little break from my usual potato-focused content, but sometimes you’ve got to treat yourself to a bit of boujee toast. Serve it up at a weekend lunch, add it to a garden party menu, or swap out your usual cucumber sandwich for this at your next afternoon tea. You could even halve the toast and plate them up canapé-style if you’re feeling extra. Imagine getting these at a wedding? THE DREAM.

How can I make this vegetarian?
Simply swap the Parma ham for grilled aubergine slices, sun-dried tomatoes or roasted red peppers. The dish still feels indulgent and totally brunch-worthy.
I can’t find fresh figs — what else can I use?
Try using sliced ripe peaches, roasted grapes, or even plums. Anything sweet and juicy will pair well with the creamy burrata and salty elements.
Can I use another type of bread?
Absolutely — a rustic ciabatta or crusty baguette works well. Just make sure it’s sturdy enough to hold all the toppings.
What’s the best way to toast the sourdough?
Either grill in a pan with olive oil for a golden crunch or pop it in the oven for 10 mins until crisp and golden.

Fig, burrata and parma ham toasts

Ingredients
- 3 fresh, ripe figs, quartered
- 3 sprigs thyme, plus a little extra for garnish
- 1 tbsp balsamic vinegar
- 2 slices of bread - I like a sourdough boule
- 2 slices of parma ham
- 2 tbsp pesto
- 1 ball of burrata (you won't need all of this, just some of the middle!)
- Squeeze of honey (regular or hot)
- Pinch of salt, pepper and sugar

Instructions
- Preheat the oven to 180ºc fan/200ºc/400ºf. Toss the quartered figs in balsamic vinegar and a pinch of both salt and sugar, then tip onto a baking tray. Roast for 10-12 minutes, until jammy and softened but not completely mushy.
- Remove the tray from the oven and set aside. Toast your slices of bread until golden and begin to decorate with small pieces of parma ham and spoonfuls of pesto.
- Arrange the roasted figs on top and scoop on the delicious middle from the burrata. Season with a pinch of flaky salt and a good crack of black pepper. Squeeze over a drizzle of honey and sprinkle with a few thyme leaves for garnish.
