This Fluffy American pancake traybake is pure, American joy because if there’s one thing the USA know how to do, it’s a damn good breakfast. This has me ready to throw on a varsity jacket, blast out some Springsteen and pretend I understand American football. 

No flipping, no faff – just golden, fluffy pancake goodness in one big pan. Load it up with blueberries, dried cherries, chocolate chips or crispy bacon – bonus points if it’s dripping in syrup. 


The one pan treat 

Now, I know what you’re thinking – aren’t all pancakes kinda made in one thing? Well yes, but this is made directly in the pan, everything tipped in and mixed in one easy step. Then I like to add my toppings prior to the bake so they fully incorporated and cooked at the same time, which works especially well for chocolate. There is nothing more satisfying than gooey chocolate.

Make pancakes even simplier and less method with my fool-proof recipe packed with chocolate and pistachios.
Serves 4

Ingredients

  • 270g plain flour
  • 6 tablespoons caster sugar
  • 2 teaspoons baking powder
  • 2 large eggs
  • 260ml whole milk
  • 60g butter, melted
  • Maple syrup
  • Imperial

  • 9.5oz plain flour
  • 6 tablespoons caster sugar
  • 2 teaspoons baking powder
  • 2 large eggs
  • 1.1 cups whole milk
  • 2.1oz butter, melted
  • Maple syrup

Instructions

  1. Heat the oven to 200c/180c fan/gas 6.
  2. Tip the flour, sugar and baking powder into the pan and mix to combine.
  3. Combine the eggs, milk and melted butter in a measuring jug.
  4. Make a small well in the dry ingredients and pour in the wet. Mix them together but don't over-do it. As soon as the batter forms, leave it alone. If you want your toppings cooked into the batter, scatter them over at this point.
  5. Bake the traybake for 15-20 mins. You are looking for the centre the be springey to the touch and the whole lot to be golden on top. If you haven't baked in your toppings, now's the time to scatter them over. Drizzle with maple syrup and cut into wedges to serve.
