
Hot honey and walnut baked brie
The easiest way to feel fancy with minimal effort
I’m still not over hot honey. Honestly, I don’t think I ever will be. It’s sweet, it’s sticky, it’s got just enough heat to keep things interesting and when you drizzle it over melted cheese? Perfection.
This hot honey and walnut baked brie is one of those recipes that looks like you’ve really gone to town, when in reality you’ve barely had to lift a finger. We’re talking oozy, molten brie topped with toasted walnuts for crunch, a generous drizzle of hot honey for that sweet and spicy kick, fragrant rosemary, flaky sea salt and cracked black pepper. If you’re feeling extra, a little garlic never hurt anyone either. Or grab a jar of homemade confit butter garlic and spread it over crusty bread before you get dipping. This is pure indulgence.
I’m not massively into Valentine’s Day in a big, gushy way, but I am into showing love through food, and more specifically, through cheese and usually potatoes. This is the kind of dish you put in the middle of the table, hand your partner a bit of bread and then go feral. That’s my kind of romance.
Why nothing beats baked brie
Brie is one of the best cheeses for baking because it melts beautifully without splitting and isn’t overwhelmingly strong. Walnuts are my nut of choice here because they bring a slightly bitter, earthy crunch that balances the sweetness of the honey. Pecans work well too if that’s what you’ve got.
Can you make hot honey at home?
Absolutely, and my method is so incredibly simple. I usually grab a jar of runny honey and stir in chilli flakes, that’s literally it. Let it sit for a bit and the heat infuses into the honey. Some people add hot sauce or Tabasco, but I prefer a few flakes. Start small though… you can always add more, but you can’t fish the chilli back out once it’s in there.
What to serve with your delicious hot honey baked brie
This is the perfect starter or sharing snack. Keep things simple so you truly enjoy the flavours in the brie:
Crusty bread or sourdough
Plain crackers or oatcakes
Crispbread
- Garlic confit butter (for your crusty bread)
Roasted potatoes or hasselbacks
A lovely green salad on the side also cuts through the richness nicely if you want a bit of health thrown.
Can this be done in the air fryer?
Yes, absolutely. Just lower the temperature slightly and keep an eye on it, as air fryers run hot and some are more powerful than others. You want melted brie and gently toasted walnuts, not charred rosemary sprigs. Check early, check often, that’s my advice.

Ingredients
- 1 x 200g mini wheel of brie
- 25g walnuts, toasted
- Squeeze of hot honey
- 3 small sprigs of rosemary
- Pinch of chilli flakes
- Pinch of flaky sea salt and crack of black pepper
- To serve: mini roasted potatoes, toasted sourdough, crackers

Instructions
- Preheat the oven to 180ºc fan/200ºc/350ºf. Place the brie into a small pot and use the tip of a sharp knife to cut a circle in the top of the brie, to make removing the top of the rind easier later on. Stick a few small sprigs of rosemary into the top of the brie. Pop the lid onto the pot and bake in the oven for 10 minutes, then remove the lid and continue to cook for 5 more minutes.
- Use a spoon to remove the top from the brie and add a squeeze of honey and the toasted walnuts. Sprinkle with flaky sea salt, chilli flakes and black pepper. Stud with some fresh rosemary sprigs and an extra drizzle of hot honey until glossy, gooey and delicious.
