
Mob Kitchen Honey and Pancetta Mash
Is it Mash potato or Mashed Potatoes? I’ve never really known but who cares cause this Mob inspired Mash is heavenly. If you know about Mob kKtchen you’ll know they love a good bit of tasty, meaty, delicious food, so when I was in the Mob Kitchen I realised I had to do an extra special Mob take on mashed potatoes but low and behold they had run out of ‘nduja of course, just my luck haha so I made the next best thing, hot honey, pancetta and rosemary, cheesy mash.
This recipe has everything you could ever want in it, salty cheese, creamy mash, crispy pancetta, sweet but hot honey and fragrant rosemary all balanced and just mouthwatering.

Mob Kitchen Honey and Pancetta Mash

Ingredients
- 4 Maris Piper potatoes
- 1 tbsp of salted butter
- 60ml double cream
- 75g diced, smoked pancetta
- 1/2 a ball of mozzarella
- 80g grated cheddar cheese
- 2 sprigs of rosemary, leaves chopped
- 2 tbsp chilli honey

Instructions
- Peel and chop your potatoes into even rounds, get them into a pan of salted cold water and bring to the boil. Boil for 10 minutes, until soft and cooked through.
- Drain the potatoes into a colander and place a clean tea towel over them leaving them to steam dry for 5-10 minutes.
- In that time fry off the pancetta pieces in a frying pan on a medium heat until they are golden all over, when almost done add in the chopped rosemary and leave them off the heat once cooked until you are ready to use them (make sure you keep all the fat in the pan).
- In a small saucepan, or in a microwave, warm up your cream to the same temperature of the potatoes.
- When the potatoes are ready, either pass them through a sieve or use a fine potato ricer to get a smooth mash, add half of the crispy pancetta with all of the fat from the pan, the butter, the cream, the mozzarella and half of the grated cheddar.
- Once mixed together get it into an oven prove serving dish then cover with the remaining pancetta, cheese, rosemary and drizzle over the chilli honey.
- Using the oven grill/broiler on a medium heat, place the mash underneath it to melt the cheese and loosen up the honey, this should take around 5-10 minutes but keep an eye on it so it doesn't burn and catch on fire x.
- Once you're happy with the caramelisation get it out and serve it up. Perfect with a roast chicken or some juicy pork chops.
Notes & Tips
- You can always make this plant basted by substring the air product with your plant based favourites, using smokey paprika and maple syrup instead of honey.

Chilli Honey or Hot Honey can be bought at most supermarkets now but if you can't find it the simplest why to make it would be to warm up some honey with 1/2 tsp of dried chilli flakes and leave it to cool down together to make this spicy, hot honey.
