If there’s one dish that lives rent-free in my head, it’s this creamy garlic chicken. It’s everything I want from a dinner: juicy, golden seared chicken bathed in a rich, velvety garlic cream sauce that’s spiked with a splash of white wine, a hint of mustard, and finished with fresh parsley. Honestly? I could happily drink this sauce out of a comically oversized Sports Direct mug — and I truly mean that. But instead, I’ll take the slightly more civilised route and smother it all over golden chicken and call it dinner. But you know where any leftover sauce is going…
This recipe is pure indulgence but made with everyday ingredients you probably already have. It’s comforting, flavour-packed, and ready in under an hour — a weeknight dinner that feels fancy af but without the faff.

Ingredients
- 2 chicken breasts, sliced in half lengthwise to make 4 pieces
- 1 tsp onion salt
- 1 tsp garlic pepper
- 25g butter, diced
- 2 banana shallots, finely diced
- 5 cloves garlic, peeled and minced
- 1/2 tsp smoked paprika
- 1 tsp mixed herbs
- 1 tsp mustard powder
- 125ml white wine
- 200ml chicken stock
- 200ml double cream
- 2 tsp dijon mustard
- Fresh parsley, to garnish
- Salt, pepper and olive oil

Instructions
- Heat a large sauté pan over a medium heat with a drizzle of oil. Season the chicken breast pieces with the garlic pepper and onion salt. Pan fry the chicken until golden brown on both sides, but don't worry about it being cooked through yet. Remove from the pan and set aside on a plate while you make the sauce.
- Chuck in the diced butter, shallots and garlic. Fry gently for 10 minutes or so until turning lightly golden brown around the edges, then sprinkle in the smoked paprika, mustard powder and mixed herbs with a pinch of salt and pepper. Deglaze the pan with white wine and leave to reduce until the pan is nearly dry.
- Pour the chicken stock into the pan with the dijon mustard and double cream. Leave to bubble away until thickened and saucy, then pop the chicken and any resting juices back into the pan.
- Continue cooking over a low heat for a few more minutes to ensure the chicken is piping hot and cooked through, then serve up with a sprinkling of fresh parsley and some super creamy mashed potatoes.
