Prawn and Chilli Linguine

This prawn and chilli linguine is fresh, fast and super flavoursome. You’ll definitely hit your vitamin A and vitamin C targets with all these cherry tomatoes, we’re getting alllll the good stuff in this one. What I especially like about this dinner is that it shows you how easy it is to make a tomato sauce from scratch with minimal ingredients and minimal effort. Making your own sauce instead of buying a jar is not as scary as it seems and will leave you with a freshness you just don’t get from a jar.

Do I have to buy linguine?

Don’t worry if you don’t have linguine as you can use spaghetti or whatever pasta you have in the cupboard – just adjust your timings to the packet instructions. I love a bit of convenience so if you have everything else in stock, why buy more pasta? You can also cut up lasagne sheets into long strips in place of linguine. I feel like that’s a kitchen hack, right?! Love a good cheffy tip.

Ingredients

  • 450g cherry tomatoes
  • 450g cherry tomatoes
  • 2 garlic cloves

  • 100ml olive oil

  • 300g cleaned prawns

  • Fresh chilli, thinly sliced (amount optional)

Method

  1. Firstly, thinly slice your garlic cloves and add to a saucepan with your olive oil. Heat until it's just warm.
  2. Then slice your cherry tomatoes in half and add half to a large hot pan with some of your garlic oil from the other pan. Cook until they start to burst and become all juicy! Then add the remaining half of your tomatoes. Reduce to medium heat.
  3. Next, tear up your basil and add to the tomato pan. Add black pepper and salt, season to taste.
  4. While your sauce is going, cook your linguine. Follow packet instructions.
  5. Then, in a different pan (yes sorry, it's another pan), add the rest of your garlic oil and get it nice and hot. Once hot, add in your cleaned prawns and fresh chilli. We're cooking these hard and fast so they don't get tough!
  6. Once the prawns are cooked, add to the pan with your tomato sauce. Drain your linguine (but keep a little water) and add this in too along with a ladle of the pasta water to loosen up the sauce a bit.
  7. Serve up and enjoy!
