Roasted Red Pepper Egg Wrap

Breakfast doesn’t need to be bland and boring. It can be SPICY and VIBRANT! This roasted red pepper egg wrap is jam packed full of flavour, is super colourful and will keep you going til lunch thanks to that healthy dose of protein and veggies. I want you to start your day right and this is the way to do it. 

This wrap is quite a speedy recipe so if you’ve got some time to prep in the morning before work or a busy day, this is a great brekky to either eat straightaway or on the go, however it can be a lil messy. I don’t know what it is with egg wraps but I’ve never had one without spilling part of it down myself and I never seem to learn my lesson, so I’ll pass my warning on. Don’t forget your napkins, bib, change of clothes…mebs stain remover. No-one wants to be walking about with egg on their face hehe…sorry…couldn’t resist. Soz. It’s worth the mess though.

Ingredients

  • 1 tbsp red pepper paste
  • 1 tbsp red pepper paste
  • 1 tsp chilli paste
  • 1 tsp chilli paste
  • 1 charred red pepper, cut into small cubes
  • 1 charred red pepper, cut into small cubes
  • 4 sun dried tomatoes, chopped
  • 4 sun dried tomatoes, chopped
  • 2 free range eggs
  • 2 free range eggs
  • 1 wrap (any wrap you fancy)
  • 1 wrap (any wrap you fancy)
  • Handful of grated cheese
  • Handful of grated cheese
  • Salt and pepper

Method

  1. In a large frying pan, heat up the red pepper paste and chilli paste. Use some of the sun dried tomato oil too for a little extra flavour.
  2. Crack in both your eggs. If you're not the best cracker, do it over a mug first to fish out any sneaky bits of shell.
  3. Sprinkle on your red peppers and sun dried tomatoes. It should be starting to smell really good right now.
  4. Season the eggs with salt and pepper and cook so that the white is cooked but the yolk runny. We love a runny yolk but no-body likes a runny white.
  5. Place a wrap on top of the pan and flip on to a plate. You want to wrap to start to bind to the filling to avoid more mess.
  6. Sprinkle with cheese and place back in the frying pan. Fold in half and cook on both sides so that the cheese melts and the wrap is crispy.
  7. Remove from the pan. Grab a napkin. Eat and enjoy!
