Ser-lutty Brownies
Let’s talk about my SER-LUTTY BROWNIES! It I want something truly indulgent, completely and utterly over the top and full of every kind of chocolate, this is what I make. OOFT GET IN MY FACE IMMEDIATELY.
Let me describe it a little for you in case you’re still not convinced. This set-lutty brownie creation consists of a chewy chocolate chip cookie layer, a crunchy biscuity Oreo layer and a rich and gooey dark chocolate brownie layer. If that isn’t enough, I like to top it off with lashings of silky white warm chocolate sauce to thoroughly make sure I’ve got every type of chocolate possible on it. I can’t write this without my mouth watering and I’m currently in a public setting so this is actually quite embarrassing.

Ingredients
For the Cookie Dough
- 115g unsalted butter
- 125g soft light brown sugar
- 1 egg
- 1/2 tsp vanilla extract
- 225g plain flour
- 1/2 tsp bicarb
- 1 tbsp cornflour
- 100g chocolate chips
For the Brownie
- 200g dark chocolate
- 200g unsalted butter
- 205g caster sugar
- 3 eggs
- 75g cocoa powder
- 100g plain flour
- 100g white chocolate chips
- 1 pack chocolate sandwich cookies
Method
- For the cookie dough layer, whip together the butter and sugar, then add in the egg and dry ingredients. Once mixed, spread the mixture onto a dish lined with parchment paper and put this in the freezer for 10 minutes.
- Preheat the oven to 180°C/350°F/Gas Mark 4.
- For the brownie, melt your chocolate and butter in the microwave.
- Whip up the eggs and sugar in a separate bowl, then fold in the melted chocolate mix.
- Then in three parts, add in your dry brownie ingredients and some more chocolate chips!
- On top of your cookie mixture, crush the sandwich cookies (I used Oreos but you can use whatever you fancy) and really fill the space! Finish by adding your brownie mixture on top.
- Place into the oven for 30-35 minutes.
- If you have any leftover cookie dough, roll this up in clingfilm and freeze for another day!
- Remove from the oven and enjoy the layers of chocolatey, biscuity, cookie goodness! If you wanna be super extra, melt some chocolate on top. Lovely.
