Summer rolls

Nothing screams hot weather more than a summer roll…and a Solero. Always gotta end a meal with an ice cream or lolly.

I feel instantly revived and happy and healthy and all the other good bits after a few of these rolls. I don’t think I could’ve fit in any more veg if I’d tried. Now, this may be a bit controversial but I also threw in some strawberries but TRUST ME, it’s amazing and that added bit of sweetness that compliments the fresh dip and veg wonderfully. You can throw in some chicken or prawns if you want a meatier alternative.

For bonus presentation points, put your finely sliced strawberries on the rice paper wrappers first so that when you’re ready to roll, you get a pretty strawberry pattern present through the rolls. It’s worthy of a Pinterest post.

I paired this with a feta, lemon and herb dip as it’s super simple to whip up and just tastes so fresh and light alongside your equally fresh and light summer rolls.

Ingredients

  • 1 red pepper, cored and finely sliced into strips

Method

  1. To start, quickly dip the rice paper wrappers in cold water on a plate for a few seconds and then lay them out on a board. They will still feel stiff when you take them out of the water but they soften up very quickly, so don’t be tempted to leave them in the water!
  2. Next, start to lay each of your vegetable strips in the middle of the rice paper wrapper, a few pieces of each. Fold in both of the sides and then roll up like a burrito. Lay your strawberry slices down first if you want it look super pretty once you've rolled.
  3. Finally, in a small blender, chuck in the herbs, lemon zest and juice and feta cheese with a tiny splash of water and blitz until a smooth, thick green dip and serve this up alongside the summer rolls. Enjoy outside in the sun!
