I hate washing so this helps.

Truffle potato crisps and sour cream dip

Ingredients
- 4 large red skin potatoes (around 1 potato per person)
- 10g dried porcini
- 1/2 tsp truffle dust
- 2 heaped tbsp flaky salt
- 100g sour cream
- 150g truffle soft cheese
- 2 heaped tsp grated parmesan
- Small bunch chives
- Salt and white pepper
- Vegetable oil to deep fry

Instructions
- In a bowl, beat together the sour cream and truffle soft cheese with the grated parmesan cheese. Season to taste with salt and pepper and add in the chopped chives, then set aside in the fridge until later.
- In a spice grinder blitz together the dried porcini, truffle dust and flaky salt until a fine powder. This makes far more than you need, but it will keep for a few weeks in an airtight tub or jar!
- Slice your potatoes into crisp thickness (around 2mm thick). No need to peel your potatoes! Heat a deep fat fryer or pan of oil to 180ºc. Fry your crisps in batches, moving constantly with a metal utensil until golden brown all over.
- Scoop out the cooked crisps and drain on kitchen paper. Tip all of the crisps into a large metal bowl (if you have one metal is great for the criiiiiispy sounds), then sprinkle liberally with the truffle and mushroom salt.
- Serve up a big bowl of crisps with your delicious dip at your next festive buffet table.
