Vegan Coconut Waffle

This vegan coconut waffle will have you living your best life. You need to really visualise yourself relaxing on a tropical beach while devouring this, not looking at a drizzly Birmingham skyline like I currently am. Sighhhh. BRB booking a holiday somewhere hot immediately. 

Anywayyyy, back to waffles. The addition of coconut to the mixture adds a sweet but delicate richness without losing any of that light and airy texture that you associate with a waffle. You honestly wouldn’t know that these don’t include any dairy. If you don’t own a waffle iron, that’s not a problem at all because you can use the batter to make THICC pancakes instead. 

Whether you choose to enjoy this waffle on its own, topped with kiwi, blueberries, coconut, maple syrup or dusted with icing sugar, it’s a lovely way to mix up your breakfast routine and give you a day off from that bland cereal. Unless you really love plain cereal, who am I to judge? You do you bab. 

This would go lovely with my grilled pineapple 😍🍍 Although this one does include a splash of rum so mebs don’t do this one on a weekday morning ahead of school or work…

Ingredients

  • 11fl oz coconut milk
  • 325ml coconut milk
  • 6 tbsp coconut yogurt
  • 6 tbsp coconut yogurt
  • 1 tsp vanilla extract
  • 1 tsp vanilla extract

  • 4 1/2oz self raising flour
  • 130g self raising flour
  • 2 1/2oz desiccated coconut
  • 65g desiccated coconut
  • 1/2 tsp baking powder
  • 1/2 tsp baking powder
  • Pinch of sea salt
  • Pinch of sea salt
  • 5 tbsp soft light brown sugar
  • 5 tbsp soft light brown sugar
  • 2oz creamed coconut
  • 50g creamed coconut
  • 1oz vegan butter
  • 25g vegan butter
  • Kiwi and blueberries to decorate (optional)

Method

  1. Mix 8fl oz / 250ml of coconut milk, yogurt, vanilla and lemon juice together and set aside.
  2. In a separate bowl add the creamed coconut and vegan butter and melt in the microwave (the creamed coconut may take a while so cut it into smaller chunks, it may also colour but that just adds caramelised delicious flavour).
  3. In another bowl (ANOTHER ONE) add the flour, baking powder, desiccated coconut, salt and sugar. Mix well.
  4. Add in the melted mixture and then the liquid mixture. You may need to add more liquid so use the remaining coconut milk here.
  5. You are looking for a thick batter that drops kinda slowly off the spoon.
  6. Get your waffle iron on to the hottest setting or you could make this into some THICK pancakes.
  7. Use some spray oil or some vegan butter on the machine and add in just under half the batter.
  8. Leave to cook for around 5 mins just keep an eye on it. Also flip it half way through.
  9. Garnish with some kiwi, blueberries and coconut! Or use up whatever fruit you've got going spare. lovely!
