Air fryer Chilli Jam Chicken Bites, Avocado Feta Dip

I’m not embarrassed to admit I ATE THE WHOLE PLATE. These air fryer chilli jam chicken bites are next-level delicious.

They’re sweet, tangy, refreshing and full of tender chicken that is coated in a beautifully sticky chilli jam. I had these as a lil snack but you could serve as a starter, side or main. It’s one of those dishes that is a proper crowd pleaser and can be whipped up some quickly. I also like to add these to a hot sharing board and dunking in some melty camembert. Get creative, chuck some spices in your flour and make a tasty new dip – a garlic mayo or sun dried tomato is great to smother all over your chicken-y bites.

To offset that bit of heat, I served mine with a cooling and creamy avocado and feta dip. What more could you ask for…you’ve got chicken, you’ve got cheese and you’ve even got some green stuff to make you feel super healthy.

Chicken Bites

  • 2 chicken breasts, cubed

  • 3.5oz plain flour

Avocado Feta Dip

  • 1 ripe avocado
  • 1 ripe avocado
  • 3.5oz feta
  • 100g feta
  • 1 tbsp avocado oil
  • 1 tbsp avocado oil
  • 1 tsp dijon mustard
  • 1 tsp dijon mustard
  • 1 heaped tbsp sour cream
  • 1 heaped tbsp sour cream

Method

  1. Preheat the airfryer to 200ºc/400ºf. Season your flour well with salt and pepper, then pass the chicken through flour, beaten eggs and breadcrumbs. Place these in a single layer in the airfryer and spray with oil, then cook for 12-15 minutes until cooked through and crispy, shaking halfway.
  2. For the dip, blitz all of the ingredients in a mini chopper until a thick, smooth dipping consistency. Add in a bit more sour cream or oil to adjust the thickness to your liking and season well with salt, lemon juice and lots of cracked black pepper.
  3. When the chicken is nearly cooked, warm the chilli jam and honey together with salt and pepper in the microwave for 30 seconds until it is a thinner, coating consistency. Add in the thyme and chopped chives, Toss the chicken bites in the glaze and dish up with the dip and plenty of extra chopped chives then get stuck in bab!
