Air Fryer Garlic Butter Prawns with Lemony Orzotto

I find the air fryer is super handy when it comes to these kinda meals because no one wants to turn the oven on just to roast some garlic. It’s a waste of oven space and waste of power but I absolutely cannot live without garlic. So, I simply whack it in the air fryer and it’s beautifully sweet and roasted after just 20 minutes. Then instead of getting out another pan (which means more washing up), I use the same drawer/tray the garlic was in and pop the prawns in. 3 minutes later, done!

My garlic butter prawns with lemony orzotto is simple but packed full of flavour. This needs to become a midweek staple. To finish the dish off, I topped with a handful of rocket leaves, diced pepper, sprinkling of feta and splash of olive oil.

Ingredients

Garlic Butter Prawns

  • 5oz raw, deveined prawns
  • 150g raw, deveined prawns
  • 1 bulb garlic
  • 1 bulb garlic
  • 3.5oz butter, softened
  • 100g butter, softened
  • 1 small bunch parsley, chopped
  • 1 small bunch parsley, chopped

Orzotto

  • 2.5oz orzo per person
  • 75g orzo per person
  • 1/2 brown onion, finely chopped
  • 1/2 brown onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 cloves garlic, finely chopped
  • 1/2 chilli, deseeded and diced
  • 1/2 chilli, deseeded and diced
  • 2 lemons, zested and juiced
  • 2 lemons, zested and juiced
  • 21oz chicken or vegetable stock
  • 600ml chicken or vegetable stock

To serve

  • Feta
  • Feta
  • Handful of rocket leaves

Method

  1. Cut the top off of your bulb of garlic and drizzle with olive oil, season with salt and pepper and wrap in tinfoil. Airfry on 180ºc/350ºf for 20 minutes.
  2. Melt your butter in the microwave and squeeze out the garlic cloves from the bulb, then season well with salt and pepper and add in the chopped parsley.
  3. Meanwhile fry off the onion in a glug of olive oil in a frying pan over a medium heat with the finely chopped garlic until softened and translucent. Add in the orzo and stir to coat it in the oil. Add in a spoonful of the garlic butter and then slowly pour in the stock a bit at a time, letting it absorb between each addition.
  4. Coat the prawns in the garlic butter, thread onto skewers and chuck in the airfryer for 3 minutes at 180ºc/350ºf.
  5. When the orzo is nearly finished cooking, add in the chopped chilli and the lemon zest. Season to taste with salt, pepper and lemon juice and top with rocket and crumbled feta.
