The veggie burger that’ll have the meat eaters switching sides

If you think veggie burgers are just a sad little afterthought at a BBQ, this chilli jam glazed halloumi burger is here to prove you OH SO WRONG.

When I picture a vegetarian burger, this is exactly what I’m picturing. Think thick slabs of grilled halloumi brushed with sweet and sticky chilli jam, piled into boujee brioche buns with beer-infused red onions, rocket (for health) and a blob of Dijon mayo.

It is honestly so good. You’ll have the meat eaters queuing up to grab this baby instead.


BBQs aren’t just for meat

If your BBQ usually consists of a pack of sausages and a few burgers from the supermarket, then what are you doing?!

Get some jacket potatoes tucked away into the embers, throw together a pan of delicious glazes, make potato skewers or get some chorizo rendering. The BBQ can do so much more than cook sausages!


Swaps and serving ideas 

Don’t like even a hint of chilli? Use a red onion chutney instead so you don’t lose that bit of sweetness. 

Mustard not your thing? Use a spicy mayo or a garlic mayo so you still have the creaminess but with a little extra flavour thrown in. 

Cooking indoors? If you’re in the UK, this is likely because it’s starting raining. We always need a contingency plan in the UK! So, if the BBQ is out of action, simply fry the halloumi in a hot frying pan until golden and caramelised instead.

Can I prepare anything ahead of time?

The beer onions can be made in advance and gently reheated when you’re ready to build your burgers. You can also get your buns and toppings prepped before the BBQ starts.

What other toppings could I add?

Juicy beef tomato slices are always a winner, as are pickles, crispy onions or other salad-y items.

This chilli jam glazed halloumi burger is the ultimate veggie BBQ recipe. Grilled halloumi, sticky chilli jam, beer onions and brioche buns create a burger even meat lovers will adore.

Ingredients

For the beer onions

  • 1 red onion, thinly sliced
  • 200ml lager
  • Salt
  • Imperial

For the glazed halloumi burger

    Metric

  • 1 block halloumi
  • Chilli jam, to glaze
  • 2 brioche burger buns
  • 1 tbsp mayonnaise, mixed with approx 1 tsp Dijon mustard (to taste)
  • Fresh rocket
  • Olive oil
  • Imperial

Instructions

  1. Tip the sliced onions into a saucepan with a drizzle of olive oil and place over the BBQ to sweat down. When soft and translucent, pour in the beer and leave to bubble. When the beer has reduced, season well and remove from the heat
  2. Halve the halloumi and pat dry. Lightly oil the slices and grill until charred, then turn over and glaze liberally with chilli jam. Flip again after a few minutes and glaze the other side.
  3. Toast your buns on the BBQ too, then spread both sides with the dijon mayonnaise. Add a handful of rocket to the bun, then a spoonful of the beer onions.
  4. Lay the glazed halloumi on the rocket and onions and add a little extra chilli jam, then pop on the lid and get stuck in.
