This curly fry potato salad is the ultimate comfort food—crispy fries tossed with creamy pickle dressing, herbs, and nostalgic flavour.

  • 500g curly fries
  • 3 dill pickles
  • 1 tsp dijon mustard
  • 2 spring onions
  • 2 heaped tbsp mayonnaise
  • 1 tsp ketchup
  • 1/2 tsp cajun seasoning
  • Small bunch parsley, chopped
  • Small bunch chives, chopped
  • 1/2 lemon, juiced (to taste)
  • salt and pepper (to taste)

  • 1.1lb curly fries
  • 3 dill pickles
  • 1 tsp dijon mustard
  • 2 spring onions
  • 2 heaped tbsp mayonnaise
  • 1 tsp ketchup
  • 1/2 tsp cajun seasoning
  • Small bunch parsley, chopped
  • Small bunch chives, chopped
  • 1/2 lemon, juiced (to taste)
  • salt and pepper (to taste)

Instructions

  1. Pop the curly fries in the air fryer and cook according to package instructions. Finely chop the dill pickles.
  2. In a bowl, combine the mayonnaise, cajun seasoning, chopped pickles, dijon mustard, most of the spring onions (keep back a few to sprinkle on top), the chives and parsley and ketchup.
  3. Season the mix with salt, pepper and lemon juice. Give it a taste, and when you’re happy, mix the sauce into the cooked curly fries. Use just enough to coat them, so you probably won’t need all of the sauce!
