Can I make it without a slow cooker?
Yes – you can cook it on the hob or in the oven. On the hob, simmer gently for 25–30 minutes until the chicken is cooked through and the sauce has thickened. In the oven, bake covered at 180°C (350°F) for around 40 minutes. I’m familiar with the slow cooker method so please keep an eye on timings and always check that the chicken is properly cooked!
What cut of chicken works best?
I use skinless, boneless chicken breasts because they stay tender and juicy during slow cooking. You can use chicken thighs, but again, keep an eye on timings.
Can I make it ahead of time?
Absolutely – in fact, it often tastes even better the next day as the flavours develop. Store in the fridge for up to 2 days and reheat gently.
What can I serve with ‘marry me’ chicken?
It’s amazing with pasta, mashed potatoes, rice, roasted new potatoes, or crusty bread for mopping up the sauce. A simple green salad or steamed veg on the side balances the richness nicely. I personally go for either mashed potato or crispy potato cubes and seasonal greens.

Ingredients
- 3 skinless, boneless chicken breasts
- 2 tablespoons tomato purée
- 300ml double cream
- ½ garlic bulb, cloves peeled and crushed
- 100g sun-dried tomatoes in oil, drained (oil reserved) and chopped
- 100ml dry white wine
- 100g parmesan, grated
- ½ lemon, juiced
- small handful of flat-leaf parsley, chopped
- salt and black pepper to season

- Season your chicken breasts well with salt and pepper. Add the chicken to the bowl of your slow cooker along with your tomato puree, double cream, garlic, sun-dried tomatoes with 1 tablespoon of their oil, wine and parmesan. Mix well, put the lid on and cook on high for 2-3 hours or on low for 6-7 hours.
- Once the chicken is cooked and tender, season up with the lemon juice and parsley and serve the chicken breasts whole with the sauce, or pull them apart with a pair of tongs or two forks and mix together.
