Fun fact, I actually got engaged whilst writing this recipe for my cookbook so that’s proof enough that this chicken recipe truly works.

Of course, I would serve this up with crispy, crunchy little garlicky potato cubes or some roasted new potatoes with butter and chopped fresh parsley, but whatever you serve with, just make sure you have extra parmesan to sprinkle over the top generously. We don’t calorie count here and we all need a lil treat sometimes.

‘marry me’ chicken

  • 3 skinless, boneless chicken breasts
  • 2 tablespoons tomato purée
  • 300ml double cream
  • ½ garlic bulb, cloves peeled and crushed
  • 100g sun-dried tomatoes in oil, drained (oil reserved) and chopped
  • 100ml dry white wine
  • 100g parmesan, grated
  • ½ lemon, juiced
  • small handful of flat-leaf parsley, chopped
  • salt and black pepper to season

  • 10fl oz double cream
  • ½ garlic bulb, cloves peeled and crushed
  • 3.5oz sun-dried tomatoes in oil, drained (oil reserved) and chopped
  • 3.3fl oz dry white wine
  • 3.5oz parmesan, grated
  • ½ lemon, juiced
  • small handful of flat-leaf parsley, chopped
  • salt and black pepper to season

Instructions

  1. Season your chicken breasts well with salt and pepper. Add the chicken to the bowl of your slow cooker along with your tomato puree, double cream, garlic, sun-dried tomatoes with 1 tablespoon of their oil, wine and parmesan. Mix well, put the lid on and cook on high for 2-3 hours or on low for 6-7 hours.
  2. Once the chicken is cooked and tender, season up with the lemon juice and parsley and serve the chicken breasts whole with the sauce, or pull them apart with a pair of tongs or two forks and mix together.

    This is banging, add a bit more liquid and chuck in some orzo pasta for the last 30-40 minutes for a proper 1 pot meal….

    I’ve heard so much about “Marry Me” Chicken—finally tried it and it lives up to the hype! So rich, flavorful, and easy to make. Definitely a new favorite in my dinner rotation!
