This is my take on the famous tuna sandwich that you’ll be making on repeat.
I’m not ashamed to admint that I lived on this sandwich for a solid week. It became my latest hyper-fixation lunch, and there was absolutely no way it wasn’t earning a permanent spot on my website. I had to share this recipe with you all, so hopefully you will be just as obsessed.
If you need a bit a more convincing, think creamy pesto tuna, melty mozzarella, buttery avocado, juicy tomatoes and crispy toasted focaccia. It’s fresh, filling and cheaper than the fancy cafe option. Let’s save some pennies.
What is a Tunacado?
The original Tunacado sandwich became famous thanks to Joe & The Juice and I can definitelt see why. It’s the perfect combo of fresh ingredients, delicious tuna and crunchy toasted bread.
This version keeps everything I love about the original while giving it a lil Poppy twist. I mean if you can improve something, why not?
The tuna filling gets an upgrade (in my opinion) with mayonnaise, basil pesto, fresh lemon juice, chives and finely diced red onion. Layer that with gooey melted mozzarella, sliced avocado and ripe tomatoes inside toasted focaccia and you’ve got yourself the ultimate homemade fakeaway lunch. Because fakeaways don’t have to just be copies of your evening meals, lets start making fancy lunches too.
The best bread for a Tunacado
Thin focaccia is my favourite because it crisps up well while still being soft enough to bite into without wearing half the filling. I mean I still require a bib, but that’s with most foods. I had to stop buying white clothes.
Toasted sourdough works well too, or even a good quality ciabatta. The key is using a sturdy bread that can handle all that glorious filling without going soggy halfway through lunch. Sandwich making is a real art.
Want to customise it even more?
Fancy adding a bit more crunch? You can add capers, pickled onions, cucumber or some rocket if you fancy. OR to be a bit extra, why not throw in some crushed salt and vinegar crisps? LOVE a crisp sandwich and that lovely tuna filling wil stop the crisps crumbling out.
What can I serve this with?
If you want to make this into more of a dinner option, you could try adding some homemade chips or a delicious tomato soup for dunking. These are sometimes the best kinda dinners in my opinion.

Can I make the tuna filling ahead of time?
Yes. The tuna mixture can be made up to two days in advance and stored in the fridge. In fact, the flavours get even better as they mingle together so why not get a little organised and have lunch sorted for the next few days.
What bread is best for a Tunacado?
Thin focaccia is my top choice, but toasted sourdough or ciabatta also work really well. Just choose something sturdy enough to hold the filling.
Is this good for meal prep?
The tuna filling is perfect for meal prep and keeps well in the fridge. For the freshest sandwich, toast the bread and assemble everything just before eating.

Ingredients
For the tuna mix
- 1 tin tuna in oil
- 2 tbsp mayonnaise
- 1/2 red onion, finely diced
- Small bunch of chives, finely sliced
- 2 heaped tsp basil pesto
- 1/2 lemon
- Salt and black pepper

For the sandwich
- Small handful of grated mozzarella
- 1 ripe avocado, thinly sliced and salted
- 2 focaccia paninis, sliced lengthwise
- 2 heaped tsp basil pesto
- 2 ripe tomatoes, thinly sliced and salted
- Salt and pepper

Instructions
- Slice your focaccia in half and spread pesto over the inside of both cheeses. Sprinkle the mozzarella over one side and pop both sides on a tray under a hot grill until golden and bubbling, then set aside to cool.
- In a bowl mix together the tuna, mayonnaise, red onion, lemon, chives and pesto with a big pinch of salt and pepper. When the focaccia has cooled slightly, lay the sliced avocado and tomato on one side and season well with salt.
- Spoon the tuna mix on top of the avocado and tomato and pop on the lid. Slice in half and get stuck in.
