Let’s be real—carrots have had a rough ride over the years. Too often they’ve been overlooked, boiled to oblivion, or left unseasoned on the side of a plate, as if they’re just there for decoration. But not today, my friends. Today, we’re giving carrots the respect they deserve, transforming them into a sweet, caramelised, sticky masterpiece that’ll have you questioning why you ever settled for boring veggies. These air fryer honey roasted carrots are here to prove that carrots can (and should) steal the show.

The beauty of this recipe is not just its taste but how ridiculously easy it is to pull off. The air fryer does all the heavy lifting—giving you perfectly roasted carrots with those golden, crispy edges and a soft, tender inside in a fraction of the time it takes in a regular oven. And let’s not even get started on the honey glaze—sticky, buttery, and with just the right balance of sweetness to make these carrots utterly irresistible.

Perfect for Every Occasion

Whether you’re looking for a side dish to pair with your Sunday roast, something impressive for a dinner party, or just an everyday veggie upgrade, these carrots have got you covered. They’re festive enough for Christmas but simple enough to make on a random Wednesday when you’re craving something extra.

Make It Your Own

Feel free to get creative with this recipe. Sprinkle over some fresh thyme for an herby twist or add a pinch of chilli flakes if you like a bit of heat. For an even more decadent finish, try drizzling some balsamic glaze over the carrots just before serving.

Carrots, I’m so sorry we failed you in the past—but with this recipe, we’re making things right. Let’s never go back to boring again.

Vegan?

To make this dish vegan, replace the honey with maple syrup and use a dairy-free vegan alternative butter.

  • 4 carrots, peeled and sliced in half lengthways
  • vegetable oil, for spraying
  • 2 tablespoons runny honey
  • 1 teaspoon butter
  • salt and ground black pepper

Instructions

  1. Heat the air fryer to 180°C/350°F.
  2. Get the carrots in the air-fryer basket and spray them with the vegetable oil. Then cook them for 10 minutes.
  3. Meanwhile, in a microwavable bowl, melt the honey and butter together for about 30 seconds, until liquidy, then season well.
  4. When the carrots have been in the air fryer for 10 minutes, tip them into the honey and butter mixture and mix well so that they are all coated, then pop them back into the air fryer for a further 10 minutes, until sticky, glazed and tender. Depending on the size of your carrots, you may need to cook them a little longer, so cook in 5-minute intervals until tender.
