Frozen Watermelon Margarita

Surely, this is what Harry Styles was singing about? This frozen watermelon margarita is magical and truly song worthy! I was hitting the karaoke bars after a few of these babies LET ME TELL YOU. It’s sweet, tangy, fruity and full of lovely tequila. It’s summer in a glass and I’ve had too many ☀️🍉

My fave part of this drink is that you get to jazz it up with a salty-sugary rim that makes you feel like you’ve popped down to your local cocktail bar abroad. After the dreary summer we’ve had so far in the UK, I think we all need that holiday feeling. If you give this a go, make sure you save a wedge of lime from this recipe to use around the rim of the glass, this allows the mixture to stick. No-one wants a messy rim.

If you’re not a lover of overly strong drinks, simply lower your tequila quantities because you can always add more back in. Or remove the alcohol altogether and enjoy a delicious guilt-free mocktail! I’ve tried to rein in my normal measures for this recipe but see what ya think! Some of you may think this is not even nearly enough alcohol.

What to do with my leftover watermelon?

  • 1/2 watermelon (rind/pith removed and cut into chunks)

  • 1 tbsp sugar (enough for your margarita glass rims)

  • Couple drops of red food dye (add more/less to create your desired vibrancy)

  • 2 limes (1-1/2 lime juice and remaining lime for the glass rim)

  • 1-2 tbsp agave syrup
  • 1-2 tbsp agave syrup
  • 1/4 cup tequila
  • 60ml tequila

Method

  1. Grab your watermelon and remove the rind and pith, then cut into chunks. Put your watermelon pieces in a container and place them in the freezer - ideally, you want to leave these in the freezer for 2+ hours.
  2. Whilst freezing, on a plate, mix together the salt, sugar and food colouring. To make it really stick, swirl a lime wedge around the rim of your glasses. Then you can gently press the rim of each glass into the mixture, it should hopefully stick! If you want a really vibrant rim, simply add more food colouring.
  3. Next, grab your frozen watermelon cubes and place them into a blender along with your tequila, lime juice and agave syrup. Blitz it up, have a taste and serve it up in your margarita glasses. Enjoy!
