Yessss, the title is a bit of a mouthful. But trust me, once you’ve taken a bite you’ll understand why I couldn’t stop talking about these. 

Inspired by the iconic Korean cream cheese garlic bread that had previously taken over social media, these crispy chicken bakes take all those flavours and turn them into the ultimate comfort food. We’ve got juicy seasoned chicken, a crispy golden breadcrumb coating and a gloriously creamy Boursin filling that oozes out with every bite. I’m drooling just writing this. 

They’re crunchy on the outside, soft and garlicky in the middle and quite frankly one of the best things I’ve made in a long time. But anything that involves garlic and cheese usually becomes a staple in our house. 


What are Korean garlic bread inspired chicken bakes?

If you’ve never tried Korean garlic bread before, you’re in for a treat with this chicken dish. But I’d advise making the garlic bread too. Orrr you could try my star crossed garlic jacket potato, which was inspired by the same viral recipe. 

Traditionally, it’s soft bread stuffed with sweetened cream cheese before being dunked in a buttery garlic coating and baked until golden. It’s rich, creamy and completely addictive. The sugar aspect sounds a little odd, but it’s needed. 

This recipe takes those incredible flavours and gives them more of a savoury and chicken-based twist. Instead of bread, we’re wrapping a creamy garlic and herb cheese filling inside seasoned chicken mince before coating it in crispy breadcrumbs and frying until beautifully golden. Oh god, I’M DROOLING AGAIN. 

It’s everything you love about a chicken Kiev, crispy chicken burger and Korean garlic bread rolled into one ridiculously tasty dinner. What’s not to love about that?!

Boursin makes life wonderfully easy because it’s already packed with garlic and herbs, but don’t feel like you have to stop there.

A few delicious alternatives include:

  • Cream cheese mixed with hot honey and mature cheddar.
  • Cream cheese with caramelised onions and Parmesan.
  • Garlic and chive cream cheese.
  • Jalapeños and cheddar for a spicy version.

Turkey mince works really well and cooks in much the same way as chicken mince.

Can I make these ahead of time?

  • 500g chicken mince
  • 150g Boursin
  • 80g cream cheese
  • 1 tsp dried basil
  • 1 tsp garlic granules
  • 1/2 tsp smoked paprika
  • 1 tsp dried oregano
  • 30g panko breadcrumbs, plus 90g to coat
  • 100g plain flour
  • 3 eggs, 2 beaten 1 whole
  • 50g butter
  • 3 cloves garlic, minced or grated
  • Small bunch chopped parsley
  • Oil for frying
  • Salt and pepper, and a pinch of sugar

  • 1.1lbs chicken mince
  • 5oz Boursin
  • 2.8oz cream cheese
  • 1 tsp dried basil
  • 1 tsp garlic granules
  • 1/2 tsp smoked paprika
  • 1 tsp dried oregano
  • 1oz panko breadcrumbs, plus 3oz to coat
  • 3.5oz plain flour
  • 3 eggs, 2 beaten 1 whole
  • 2oz butter
  • 3 cloves garlic, minced or grated
  • Small bunch chopped parsley
  • Oil for frying
  • Salt and pepper, and a pinch of sugar

Instructions

  1. Tip the chicken mince, panko breadcrumbs, 1 of the eggs, dried herbs and spices into a large mixing bowl with a large pinch of salt and pepper. Use your hands to mix well until combined, then weigh into approximately 90g/2oz balls.
  2. In another bowl, beat together the Boursin, cream cheese, salt, pepper and a pinch of sugar. Flatten the balls of chicken mince in your hand and spoon 2 large tsp of the Boursin mixture into the middle.
  3. Carefully close up the mince around the Boursin and set it aside, then repeat for the rest.
  4. Season the flour generously with salt and pepper. Pass the formed patties through the flour, beaten egg and breadcrumbs, then pop on a tray and refrigerate for atleast 1 hour to firm up.
  5. Heat a deep fat fryer or pan of oil to 170ºc/325ºf. Deep fry the breadcrumbed chicken for 5-6 minutes, until golden brown and cooked through. You can check by cutting it open, or by using a food probe and checking the chicken reaches 70ºc/160ºf.
  6. When the chicken comes out of the oil, sprinkle with salt so that it sticks to the breadcrumbs.
