I love lasagne. I love bolognese. I love chips. But I reaaaally love LASAGNE LOADED FRIES.

When Italian food and potatoes collide, I’m in my happy place. Plus, bolognese sauce is so versatile. I basically made a massive batch, portioned it off and saved it for recipes like this. That way you feel like you’re getting an entirely different meal but with minimum effort and far less cooking. You’ve already done the hard work. 

Plus, since having a baby, I’ve found myself gravitating toward batch/quick meals that deliver on taste, but also on speed. And to save even more time, I like to whack store-bought chips in the air fryer. Yes, even the Potato Queen occasionally purchases frozen chips, and no I’m not ashamed. We don’t always have time to knock up a triple cooked chip, but I absolutely always will if I do have the time…


The leftover glow-up

Let’s be honest, leftover bolognese can feel a bit same-same after day two. But THIS is how you bring it back to life. Crispy chips acting as your “pasta”, rich saucy beef, silky béchamel, then finished with a molten cheesy top…it’s giving full lasagne energy with about 10% of the effort.

The air fryer is doing the heavy lifting here as well by crisping your chips to golden perfection while you reheat that glorious sauce. It’s quick, it’s efficient, and it means less washing up, which frankly is a win in itself. I just really hate washing up. 


Maximum comfort, minimum effort

This is proper comfort food, but without the usual faff. No layering sheets, no baking trays, no waiting around for an hour while it bubbles away in the oven. Just layer, melt, devour. It’s the kind of dinner that feels indulgent but secretly fits into a busy weekday.

Yep! Cook your chips in the air fryer first until crispy, then layer with hot bolognese and béchamel. Pop it back in for a few minutes to melt the cheese on top, just keep an eye on it so it doesn’t burn.

Make sure your chips are properly crispy before adding toppings. Don’t overload with sauce either as less is more, babs. You want saucy, not swampy.

Mozzarella for that iconic stretch, but a cheeky bit of cheddar or parmesan adds extra flavour. Honestly, use what you’ve got, this is a no-rules situation.

Can I reheat leftovers?
You can, but they’re best fresh. If reheating, stick them back in the air fryer to crisp up again rather than microwaving.

What else can I use bolognese sauce for?
Put it on a jacket potato, make it into chilli, I have even been known to put it in a toastie with cheese and leftover béchamel…ultimate hangover cure.

Can I make this veggie/vegan?
Absolutely, you can swap out the beef mince in your bolognese for soya mince or lentils, and use plant-based dairy products in your béchamel sauce.

  • 500g frozen fries
  • 250g leftover bolognese
  • 25g butter
  • 2 tbsp plain flour
  • 250-300ml milk
  • 50g grated mozzarella cheese
  • Salt and pepper

  • 9oz leftover bolognese
  • 1oz butter
  • 2 tbsp plain flour
  • 9fl oz milk
  • 2oz grated mozzarella cheese
  • Salt and pepper

Instructions

  1. Preheat the airfryer to 200ºc/400ºf. Tip the fries into the basket and cook according to package instructions.
  2. While the fries are cooking, melt the butter in a small saucepan over a medium heat. Sprinkle in the flour and whisk until it forms a paste, before drizzling in the milk a bit at a time, allowing it to boil between additions.
  3. Season the sauce with salt and pepper. Give the fries a good shake and top with spoonfuls of bolognese. Slather the béchamel sauce on top and sprinkle generously with grated mozzarella.
  4. Place back into the airfryer for 10 minutes at 200ºc/400ºf to melt and brown the cheese. If you're feeling boujie, mix 1 1/2 tsp garlic granules and 1 tsp dried mixed herbs with 2 tbsp melted butter and brush all over the top. Pop it back into the airfryer for 2 minutes, just to finish it off.
