Serrano & chorizo crisp charcuterie
Oh hello serrano & chorizo crisp charcuterie
I’m in love.
If you’ve noticed my last few recipes, you’ll see they’re dedicated to crisp charcuterie sharers. Am I obsessed? Maybe. I can’t stop making them. Every time I think I’ve made the ultimate charcuterie, another flavour combo pops into my head and I immediately need to test it.
And when I say sharing board, I should probably clarify that so far it’s mainly been me doing the taste testing. Quality control is super important here.
The Spanish-inspired crisp sharer
This layered beauty combines salt and vinegar crisps, garlic aioli, serrano ham, crispy chorizo slices, red pepper stuffed olives, Manchego cheese and cream cheese stuffed peppers.
Basically, it’s like a fancy Spanish picnic and a packet of crisps had a very beautiful baby.
No cooking necessary
One of the best things about this recipe is that there is literally no cooking involved.
If you’re using ready-sliced chorizo, you can simply layer everything up and get stuck in. If you fancy taking things up a notch, you can crisp the chorizo in a frying pan for a few minutes but that’s completely optional.
Customise away baby!
The beauty of crisp charcuterie is that you can absolutely play around with the flavours. Add different cheeses, additional meats, a bit of chilli jam, some honey or whatever else you fancy.
FAQs
Can I add anything else?
Yessss. Anchovies work super well here and embrace those classic Spanish tapas flavours. Silver skin onions are another lovely addition and help create something that’s almost like a deconstructed Spanish Gilda. I actually booked a trip to Spain after eating this haha.
Roasted red peppers, marinated artichokes, almonds and extra olives would also be SOOOO GOOD.
Does it have to be salt and vinegar crisps?
Nope. Chilli crisps would be delicious, especially if you like a bit of heat. Chorizo-flavoured crisps are another obvious winner and would complement the toppings well. Even a good quality sea salt crisp would work if that’s what you’ve got.
Can I use a different ham?
Yep! Prosciutto, Parma ham or even a good quality cured meat selection would all be delicious alternatives.
Can I make this ahead of time?
You can prepare all the ingredients in advance, but I’d recommend assembling just before serving. Crisps and moisture aren’t going to do too well when left alone for too long.
Do I need the aioli?
Not necessarily. Cream cheese, whipped feta, Boursin or even a little mascarpone would all work well as a creamy base. I do like that hit of garlic though.
What should I serve alongside?
A lovely glass of white wine, sangria or a good ole lager would all be delicious. You could also add some fresh grapes, figs or sliced pear for a little sweetness and an added side of health.
Is this a starter, snack or dinner?
The answer is all the above. It works as all three and you can enjoy whenever or however you want bab!
