
Smash burger tacos
When two wonderful worlds collide
The love child of a crispy-edged smash burger an a maximum efficiency taco – two takeaway icons coming together to make something arguably even better. Why have I not done this sooner?!
This is also potentially one of my favourite recipes from the book. It makes for an incredibly quick and delicious dinner but it’s also perfect as a quick snack or lunch for when I’m alone and in need of a quick fix. The classic burgers toppings are truly iconic but I’ve even whacked on a little Caesar salad and dressing to give it another boost. If you make anything from my book, make it this! Why batch?
I can’t believe I didn’t batch more recipes earlier on, because it’s such a time and money saver! It’s also amazing having meals ready to go for those days when you just can’t be bothered to cook. Yes, even as a chef, there are days when I don’t want to see another chopping board or kitchen utensil.
And these smash burger tacos are the perfect freezer-friendly recipe because you can store them flat in the freezer meaning they take up minimal space and can be easily portioned off. You can also play around with the toppings, but it’s great that you’ll always have a base ready to go in the freezer. I like to serve these up with crispy French fries but you can could go down the American fries, corn, coleslaw route or the Mexican nacho, salsa and guacamole route.
Batch cooking has also been a lifesaver for me since having my baby. The time I save by having homemade meals ready to go is genuinely worth its weight in gold. Instead of starting dinner from scratch when everyone is hungry and I’ve got approximately 17 other things to do, I can pull something from the freezer and have a seriously good meal on the table in minutes. Everyone is happy.
To enjoy now…
heat a frying pan with a drizzle of olive oil over a medium high heat. A few at a time, fry the tacos meat side down for 4-5 mins until golden brown, then flip so that the meat is uppermost. Place a slice of American cheese on top of each smashed burger, pop a lid on the pan for 1 min to melt the cheese. Finish topped with burger sauce, sliced onion and shredded lettuce. Repeat as necessary.
To eat later…
Freeze the meat topped uncooked tacos flat on a baking sheet until solid, then transfer them to a freezer bag, layering them between sheets of parchment paper, for up to 3 months.
To cook from frozen, follow the instructions given below, but cooking for 6-7 mins on the first side and 2 mins on the second side. Finish with the sauce, onion and lettuce.

Ingredients
For the tacos
- 400g beef mince (15% fat)
- 2 tsp garlic granules
- 2 tsp onion granules
- 2 tsp Italian seasoning
- 2 tsp salt
- 2 tbsp American mustard
- 2 tbsp tomato ketchup

- 8 slices of American cheese
- Burger sauce, to taste
- Sliced red onion
- Small handful of torn lettuce

Instructions
- In a bowl, mix together the mince, garlic granules, onion granules, Italian seasoning, salt, mustard and ketchup until evenly distributed and well combined.
- Separate the mixture into 8 equal sized balls and smash each one down on to a tortilla. Using lightly oiled hands, flatten out the mixture each time so that it covers the surface of the wrap.
- To enjoy now, heat a frying pan with a drizzle of olive oil over a medium high heat.
