The soup and potato combo of your dreams
This is my take on the VIRAL broccoli, cheddar & potato soup. And if you’re thinking what makes a soup recipe viral, I’ll give you a pretty big clue…it’s carby, beige and my favourite thing in the whole world. Yep. POTATO.
So instead of serving up your soup in a standard, boring bowl, mix it up a little and whack it in a glorious roasted potato. Personally, I think this is even better than soup in one of those bread bowls (although I do love those too).
Is this like a stuffed jacket potato?
Kind of. But to make your potato more of a utensil, you’re going to scoop out the cooked centre (don’t worry, we will use this part later on) and fill with creamy, cheesy broccoli soup. Then, to keep that heat in, we’ll repurpose the scooped-out potato by mixing it with bacon, chives, sour cream, garlic and onion powder, softened butter, salt and pepper and then place into a piping bag for smothering on top of our soup-filled spuds. Did I mention this all goes back in the oven to get beautifully crisped up? It’s honestly the dinner of dreams.
What’s in the soup?
I love a good broccoli soup, and this version combines sauteed onions, garlic, butter, flour, evaporated milk, chicken stock, cheese and of course, broccoli. You get a luxuriously thick soup, perfect for your hollowed-out potatoes.

Viral broccoli, cheddar & potato soup

Ingredients
- 4 large Maris Piper potatoes
- 4 rashers streaky bacon, cooked, crispy and chopped
- Bunch of chives, chopped
- 50g sour cream
- 2 tbsp garlic powder
- 2 tbsp onion powder
- 30g soft butter, plus an extra knob for cooking
- 1 brown onion, diced
- 3 cloves garlic, chopped
- 2 tbsp plain flour
- 400ml evaporated milk
- 400ml chicken stock
- 1 head broccoli, chopped
- 60g grated cheddar
- 30ml hot sauce
- Salt, pepper and olive oil

Instructions
- Preheat the oven to 200ºc fan/220ºc/400ºf. Pierce the potatoes all over with a fork and drizzle with olive oil. Season well with salt and bake for 1 hour, until cooked through.
- Slice off the top and scoop the inside of the potato out into a bowl, Mix in the bacon, chives, sour cream, garlic and onion powders, softened butter, salt and pepper. Transfer to a piping bag and set aside.
- Melt the knob of butter in a large sauté pan and add in the onions. Cook for 5-7 minutes until softened and add in the garlic and a pinch of salt and pepper. Sprinkle in the flour and cook until browned.
- Slowly pour in the evaporated milk and chicken stock and bring to a bubble, whisking regularly to avoid lumps. Add in the broccoli and simmer for 8-10 minutes, then whisk in the cheese a handful at a time along with the hot sauce.
- Spoon the soup into the hollowed out baked potatoes and pipe the mash potato mixture on top. Place the potatoes onto a baking tray and bake for 10-15 minutes until golden brown on top.
