Ridiculously easy and done in no time. My soy and chilli mince with rice is ideal for those who want a quick yet flavoursome dinner. Plus, I even used microwave rice to save even more time…and washing up. You can obviously boil your rice, but just adjust your timings accordingly so it’s all ready at the same time.

Let’s face it, we’d all love to elaborate dinners every night but we’re busy, we’re tired and food is expensive. Sometimes we want something convenient, without resorting to a takeaway so this is what you need to make. It gives off takeaway vibes without the guilt and cost. And it will 100% be done quicker than the time it will take for that takeaway to be delivered.

If you want, you can throw in even more greens or veggies if you’ve got some of your 5-a-day left to hit, however it is delicious as is. I’ve added peppers, mushrooms, peas and more if I’ve got veggies that are getting perilously close to going off. I don’t like waste and recipes like this are super versatile and great for utilising stock cupboard and fridge ingredients.

  • 1 9oz steak mince
  • 1 250g steak mince
  • 1 tbsp oil
  • 1 tbsp oil
  • 1 tsp Chinese 5 spice
  • 1 tsp Chinese 5 spice
  • 1 clove of garlic minced

  • 1/2 a red chilli, chopped
  • 1/2 a red chilli, chopped
  • 3 1/2oz of chopped tomatoes
  • 100g of chopped tomatoes
  • 2-3 tbsps honey
  • 2-3 tbsps honey
  • 2 tsp soy sauce (add more to taste)

  • 2 spring onions, chopped

  • 1 sachet of microwave basmati rice
  • 1 sachet of microwave basmati rice
  • 1/2 a red chilli for garnish
  • 1/2 a red chilli for garnish
  • A pinch of sesame seeds for garnish

Method

  1. To start, get a medium-sized frying pan on a high heat.
  2. Add in oil and your steak mince, cook until coloured.
  3. Add in the garlic, chilli, five spice, honey, soy and tomatoes.
  4. Leave to cook on medium for 5 mins, until thickened.
  5. Add in the spring onions.
  6. Microwave your rice and serve in two serving bowls. Or make the rice following packet instructions (you may need to do this earlier if boiling).
  7. Add in your soy and chilli mince and garnish with spring onions, red chilli and sesame seeds. Easy!
